Meatballs in chipotle sauce are always a popular dish in the homes of Mexican families, they are served mainly at lunchtime and are mostly accompanied with rice. There are different preparations of meatballs, but this recipe based on ground beef mixed with pork rinds, stuffed with a surprise of Manchego cheese and cooked in a tomato sauce or caldillo with dried chipotle peppers, will surprise you.

Chipotle Meatballs Stuffed with Cheese

Preparation time 20 min

Presentation: Serve the meatballs in a deep plate with caldillo and sprinkle with finely chopped cilantro.
Tips: To give a richer flavor to your sauce, fry the garlic and onion until they have a golden color, the more color it has, the more flavor your sauce will have.

Ingredients

3 oz of pork rind thin, for the meatballs
1/2 kilo of ground beef, for the meatballs
2 eggs, for the meatballs
1/3 cup of White onion, finely chopped, for the meatballs
2 tablespoons of garlic finely chopped, for the meatballs
3 tablespoons of fresh coriander finely chopped, for the meatballs
to taste of salt
to taste of pepper
1 cup of Manchego cheese, cut into cubes
1 tablespoon of vegetable oil, for the caldillo
4 cloves of garlic, for the caldillo
1 onion, cut into pieces, for the caldillo
8 gourd tomatoes, cut into quarters, for the caldillo
3 chipotle chilies, dried, without seeds, for the caldillo
1 teaspoon of allspice, for the caldillo
1 pinch of oregano, for the caldillo
1/8 bunch of fresh coriander, with everything and root
1/4 cups of beef broth, or chicken, for the caldillo
1 pinch of salt
1 tablespoon vegetable oil
to taste of fresh coriander, chopped, to decorate

Preparation

For the meatballs, pulverize the pork rinds with the help of a mortar. In a bowl mix the powdered pork rind with the meat, the egg, the onion, the garlic and the coriander. Season with salt and pepper.
With your hands, form balls and fill with the Manchego cheese cubes. Reservation.
For the caldillo, heat the oil over medium heat in a deep frying pan, fry the garlic, onion, guaje tomato, chipotle chili, add the pepper, oregano, coriander and fill with beef broth. Cook for 10 minutes until reduced by half. Remove and chill.
Blend the previous preparation and season.
Heat oil in a pot over medium heat and fry the sauce, add the meatballs and cook until well cooked.
Serve in a deep plate, garnish with finely chopped cilantro and enjoy.
